Cheesecakes with dried apricots - the basic principles of preparation

The main ingredient of the dish is cottage cheese. The taste of cheesecakes depends on the quality of this product. Ideally, of course, use a homemade product prepared on your own. It will not be difficult to do this. All you need is sour milk. It is heated until flakes of cottage cheese float to the surface. Then the sieve is covered with gauze and milk is discarded. Gauze is collected in the form of a bag, suspended and left until all the serum has drained.

As a rule, cheesecakes are cooked with raisins. But they are equally tasty with dried apricots, which have a pleasant sweet and sour taste. When buying dried fruits, pay attention to their appearance. Natural dried apricots will not have a bright color. In addition, such a product is quite tough, so it is advisable to steam it in hot water and dry it before adding it to the dough.

The dough is kneaded on the basis of cottage cheese with flour or semolina. Sugar can be added, or cheesecakes can be prepared without it. Do not knead the dough too steep so that the baking does not turn out rubber.

Cheesecakes are served with sour cream, condensed milk or any jam.

Cheesecakes are fried in a pan or baked in the oven. The second cooking option is preferable for those who follow a diet.

Recipe 1. Cheesecakes with dried apricots

Ingredients

600 g of cottage cheese;

30 ml of sunflower oil;

150 g dried apricots;

50 g flour for breading;

1 egg

3 g of cinnamon;

½ stack. wheat flour;

3 g of salt;

5 g of potato starch;

3 g of baking soda.

Cooking method

Rinse the dried apricots with a tap. Place it in a deep bowl and fill it with hot water. Leave dried fruit soaked for 20 minutes.

Ingredients

cottage cheese - 350 g;

vanillin;

white sugar - 100 g;

flour - 50 g;

dried apricots - 50 g.

Cooking method

Put the cottage cheese in a blender bowl and beat it until smooth. Transfer the fermented milk product into a deep cup. Add semolina, baking powder and granulated sugar. If the curd turned out to be liquid, add more semolina. Stir well and beat in two eggs. Knead well again.

Wash dried apricots and soak in warm water. Drain the infusion and rinse the dried apricots under the tap. Put on a disposable towel and dry. Crush dried fruits into small cubes.

Add dried apricots to the curd mass and mix gently. Take a little dough with wet hands and form balls. Roll them in flour. Heat a frying pan with vegetable oil well. Flatten the balls slightly. Ingredients

300 g low-fat cottage cheese;

30 g of white sugar;

Rinse dried apricots and raisins. Sort, separating the tails. Put in a deep bowl and pour dried fruit with hot water. Leave for half an hour. Then drain the infusion, and lay out the dried fruits on a paper towel and dry. Finely chop the dried apricots and mix with raisins.

Put the cottage cheese in a deep bowl. Add the dried fruit mixture, soda, egg, salt, white sugar and sift the flour. Stir thoroughly rubbing the mass.

40 g flour;

Cooking method

Rinse dried apricots, pineapples and raisins. Put dried fruits in a deep bowl, pour boiling water and leave for ten minutes. Then drain the infusion, put the dried fruit on a napkin. Finely chop the pineapples and dried apricots.

Rub the cottage cheese through a sieve or mash with a fork so that there are no large lumps. Beat two eggs, add methane, granulated sugar, flour and semolina. Interrupt everything with a mixer or blender until a smooth, smooth mass is obtained.

Wash dried fruits. Put the gaiters and prunes in a deep bowl, pour boiling water and leave for ten minutes. Put dried fruit on a paper towel and pat dry. Grind them into small pieces.
