Crispy crusts, with or without filling, is a whole page of European confectionery art. Back in the Middle Ages, they entered the menu and the folklore of the townspeople and rural residents, they were cooked at fairs, served to the table of the nobility.

Confectioners made dozens of recipes for the waffles themselves and without counting the number of fillers and fillings. Waffle cones are filled with cheese and seafood, mushrooms, minced meat and vegetables are used. But there is no better waffle than filled with condensed milk, cream, just jam or honey. Sweet tubes and horns scatter from the shelves of street vendors, like scared little sparrows.

Today we are preparing this luxurious treat at home. The process will be exciting, but time-consuming, and the most difficult thing is to save at least some sweets from the main little tasters.

General principles for making waffles

The presence of electric waffles is a big plus in the preparation of waffles. It significantly reduces time and facilitates the process itself. For lack of such an assistant, many refuse dainties and in vain, because waffles can be baked in a pan and even in the oven.

The main components of any waffle dough are eggs, flour, sugar and fat: butter or margarine. But this is only the basic basis, the dough is often supplemented with products that give homemade waffles softness or vice versa make them crispy. Such an additive can be sour cream, milk, kefir, cottage cheese. Vanilla is usually put for taste, but if desired, it can be replaced with cinnamon powder. To make the wafers taste coffee, the dough is made with coffee brewed in milk.

How to bake waffles in an electric waffle iron? Before starting to bake, both work surfaces rubbed abundantly with vegetable oil and only then include it in the network. The dough is poured onto the work surface after full heating, for which the device is kept closed for at least 10 minutes. The dough is poured strictly in the center of the bottom plate and, without leveling, cover the top. Baking usually requires between one and a half to three minutes, depending on the capacity of the device. Readiness can also be set visually, when the cake is sufficiently baked, the steam stops coming out.

Cooking in a pan almost does not differ from the previous version. Due to the lack of pressure on the dough from above, it must immediately be poured with a thin layer, giving the desired shape, and turned over in time.

Baking waffles in the oven is a little longer and the process itself is more time consuming. The dough is usually poured onto a baking sheet previously grated with vegetable oil. But it is best to cover it with a silicone substrate. Wafers are baked in the oven in stages. Initially, they stand in it for four minutes, then they get it out and let it stand for a minute. Then again place the baking sheet in the oven and bake for a minute.

Finished waffles are left in the form of cakes or immediately, while still hot, rolled up in the form of horns and tubes.

Homemade waffles can be used as cake cakes or just served with tea with jam or condensed milk. The most common uses are tubules or filled horns.

The classic recipe for simple wafers with boiled condensed milk - gourmand "Gourmet"

Ingredients:

large eggs - five pieces;

200 gr. sugar

wheat flour - one glass;

200 gr. quality margarine.

For filling:

a small can of boiled condensed milk.

Cooking method:

Before frothing, beat eggs with sugar with a mixer.

Add the melted margarine, melted, which has cooled, and again, beat everything well.

Stirring with a whisk or a spoon, we introduce the sifted flour in small portions. Knead thoroughly, each time controlling the uniformity of the dough. Lumps should not remain.

Cover the upper and lower surfaces of the electric waffle iron with vegetable oil. Warm up for at least five minutes when closed.

Open, pour in the center one and a half tablespoons of dough and, without waiting for it to spread, tightly close. After a minute, open, carefully remove the wafer with a spatula and immediately turn it into a cone. We close the waffle iron for this time.

Having turned the horn, we pour the next portion of the dough into the device.

We fill the cooled wafers with caramelized condensed milk.

Simple wafer rolls in an electric waffle iron on sour cream

Ingredients:

melted butter - half a glass;

sugar - five tablespoons;

one glass of wheat flour;

half a glass of fat sour cream;

eggs - 5 pcs., selected.

Cooking method:

Choose two bowls. Carefully, while preserving the shells of the yolks, we crack the eggshell. Squirrels need to be poured into one bowl, and the yolks into another.

The proteins are placed in the refrigerator, and sugar is added to the yolks and rubbed thoroughly. A homogeneous white mass should be obtained.

Pour non-hot melted butter to the yolks, add sour cream and beat thoroughly. It is better to take a mixer, then the sugar grains will dissolve faster. Gradually adding flour, knead until smooth.

We get a bowl of squirrels. Add a little, literally from the match head, salt and slowly begin to whisk. Mixer speed is increased gradually. Beating the whites in a strong foam, transfer them to the yolk mass. Slowly, interfere with the lush mass from top to bottom.

Pour a full spoonful of dough into the middle of the grated butter and the warmed form and close it tightly. Holding the handles, so as not to weaken the pressure of the upper plate, bake the wafer for one and a half minutes.

Ingredients:

wheat flour - 200 gr.;

one egg;

half a spoonful of lemons;

a glass of milk;

three tablespoons melted margarine;

baking soda - 0.5 tablespoons;

half a teaspoon of vegetable oil.

Cooking method:

Cooking baking powder. We combine soda with citric acid, mix thoroughly.

Double-sieve the flour on a fine sieve, mix it with a self-prepared cultivator. We do this not with a spoon, but with a whisk - the ripper will disperse more evenly.

Beat the yolk with cool milk, pour over the flour, mix. In a thin stream, stirring the flour mass in a circle, we introduce the melted and cooled margarine. Whisking, bring the dough to homogeneity. Then cover the bowl with a cloth and set aside for an hour. The protein is placed in the refrigerator for this time.

Beat the chilled protein in the foam and gently mix in the settled dough.

On both halves of the waffle iron, apply a thin layer of vegetable oil, plug it into the network and let it stand closed for heating.

In the usual way, bake waffles. Finished products are not laid out in a pile. It is advisable to arrange them on a wire rack so that they dry out a little.

Simple waffles on cottage cheese

Ingredients:

elastic, 9%, cottage cheese - 100 g .;

two eggs;

two tablespoons of sugar;

50 gr natural creamy, preferably 72%, butter;

three tablespoons of flour;

a teaspoon of vanilla sugar crystals;

baking soda - a quarter of a teaspoon;

homemade icing sugar.

Cooking method:

Break eggs into a wide bowl. We pierce the shell of the yolks, shake until homogeneous. Add the cooled melted butter, sugar and beat well.

Rub the cottage cheese through a sieve into the cooked mass. Pour flour, then soda, stir the dough until smooth. Do not whisk.

We put no more than one and a half tablespoons of dough on a heated, greased waffle iron, bake for about two minutes. Readiness can be easily identified by steam. When the cake is ready, it stops coming out.

After cooling, sprinkle the finished waffles with icing sugar.

Simple wafers on kefir - "Dietary"

Ingredients:

kefir, maximum fat content - one glass;

100 gr. sugar

two eggs;

2 tablespoons of frozen oil;

a full glass (without slide) of flour;

a teaspoon of soda, incomplete.

Cooking method:

Pour kefir into a bowl. We put soda and, stirring well, stand for a quarter of an hour so that the "ripper" is activated in an acidic environment.

Beat eggs with sugar separately. We achieve not only uniformity, but also maximum dissolution of sugar crystals.

Combine the kefir with the egg mixture. After mixing, we introduce all the flour and again thoroughly stir.

Ready, by consistency like rare sour cream, pour the dough on a spoon onto a heated waffle iron. Bake for about two minutes.

Simple wafer recipe in an oven on a baking sheet

Ingredients:

squirrels of four eggs;

80 gr. sugar, homemade icing;

half a glass of flour;

5 gr. crystalline vanillin;

cream - 4 tbsp. l

Cooking method:

Put egg whites in the refrigerator. After an hour we take it out, add a small pinch of salt to them and begin to slowly whisk. When they begin to foam, the whisk speed is gradually increased. Beat until stable foam.

Mix the powdered sugar with the flour. Double-sifting the mixture, pour vanilla sugar into it and stir with a whisk. Gradually mix the flour mixture into whipped proteins, pour cool milk in the end.

Ingredients:

instant coffee - 30 g .;

150 ml of milk;

standard bag of vanilla sugar;

half a packet of sweet cream butter;

three eggs;

sugar - 75 gr.;

cultivator for dough, factory - 0.2 teaspoon;

150 gr. flour.

Cooking method:

Pour milk into the pan. Add vanilla, set to maximum heat. Bringing to a hot state, we fall asleep brewed coffee, stirring with a whisk, bring to a boil. Reduce the heat to medium, brew coffee in milk for three minutes. Cool, filter using a sieve.

Softened, slightly melted butter, beat with sugar until creamy. Without ceasing to beat, we introduce eggs one at a time. After each, beat the oil mass for a minute.

Mix and sift flour with baking powder. Pour the mixture into the oil mass, gently mix with the same mixer at low speed. At the end, pour the coffee brewed in milk. Beat the coffee dough until it becomes homogeneous. Then we cover it with a linen napkin, stand for at least half an hour.

We bake waffles in the classical way, on a well-heated waffle iron.

The simplest waffles without a waffle iron in a pan

Ingredients:

three eggs;

a full glass and 2 more tablespoons of sugar;

a glass of wheat flour;

70 gr. frozen home cream.

Cooking method:

Wafers need liquid, but not hot fat. Melt the butter over low heat or in the microwave and let it cool well.

Break three eggs into a bowl and begin to beat. Bringing to frothing, gradually add granulated sugar. It is desirable to achieve complete dissolution of saccharin.

When the sweet egg mass slightly increases in volume, we begin, like sugar, gradually introduce flour into it. The result should be a tight dough.

On medium heat, dry and heat the pan. Pour oil into it with a thin layer and warm up for no more than 30 seconds.

Pour a small amount of dough into a pan with a large spoon or a small ladle for pancakes. We turn it over almost immediately, it takes no more than 15 seconds to bake one side.

Put the finished wafers on a plate. Serve with jam or condensed milk.

Wafer Tricks - Useful Tips

If you like crispy, non-softening wafers when filling and storing for a long time, choose formulations with the least fat and high sugar content. Fill the tubes or horns with thick creams - custard, butter, protein, and ordinary caramelized condensed milk will do.

In order not to burn yourself, roll up hot waffles with gloves. A neat tube can be wrapped with a stick. It is desirable that its diameter does not exceed 1.5-2 cm. A beautiful horn can be obtained if the cake is rolled using a cone used for baking puff tubes.
