Roquefort cheese can be a new effective tool for the prevention of cardiovascular disease, according to Cambridge biotechnologists.

The anti-inflammatory properties that some components of the product possess, as experts believe, are formed in it due to its specific origin: at the last stage of manufacture, roquefort, traditionally classified as blue cheese, is placed in limestone grottoes located in the south of France, where it takes three months maturation.

While the cheese is stored in a cave, a noble blue mold forms inside it, in addition to its unique taste, giving it a lot of useful properties. Specialists from Cambridge conducted their own research on the effect of Roquefort on the heart. As part of the scientific work, experts analyzed information on the level of cheese consumption in different countries of the world, as well as the prevalence of cardiovascular diseases among their inhabitants.

Estimates showed that in countries with a high level of consumption of Roquefort, such as France or Germany, deaths due to heart problems occurred much less frequently. But experts say: such indicators may depend on many factors. And although Roquefort is only one of them, nevertheless, its properties undoubtedly contribute to people's health.

One of the leading authors of the study said: "Cardiovascular disease is far from the only threat that Roquefort can resist. We know that it also protects a person from cellulite, arthritis, intestinal problems, and even slows down the signs of aging."
